Avocado Chicken Salad with Cilantro Lime Dressing

Think of this is almost a fajita salad! The cilantro-lime salad dressing will be perfect, especially if you can make it yourself at home. This homemade dressing will cut back on more than 12 grams of added sugars when bought at a store!

Ingredients

  • 1/4 avocado
  • 1/2 tomato
  • Frozen corn
  • 2 cups of lettuce
  • Cheddar cheese
  • Crushed tortilla chips*
  • 1 clove of garlic
  • 1 lime
  • Salt
  • Pepper
  • White Vinegar
  • Extra virgin olive oil

Directions

Combine piece of chicken, ¼ avocado, half a tomato, and a handful of frozen corn (which will thaw by lunchtime) with 2 cups of lettuce of your choice. Adding a handful of cheddar cheese or crushed tortilla chips is optional. To make the dressing, combine a cup of cilantro, a clove of garlic, the juice of 1 lime, a generous pinch of salt and pepper, 2 tablespoons of white vinegar and 3 tablespoons of extra virgin olive oil. This should make enough dressing for two servings if you would like to save some more for another salad!
